
Eric Walters
has a Ph.D. in Medicinal Chemistry from the University of Kansas.
Dr.
Walters is Professor of Biochemistry and Molecular
Biology in the Chicago Medical School, at Rosalind Franklin University
of Medicine and Science. He has been on the faculty there
since 1991. Prior to that, he spent 12 years carrying out
research in the food and pharmaceutical industry, including 9 years in
the discovery of new high potency sweeteners. He continues to
do research in sweet, bitter, and fat taste, and has over 75 research
publications. He has consulted for several food and
pharmaceutical companies, and has served as an expert witness in cases
involving sweetener chemistry and biology at the U.S. International
Trade Commission and in Federal District Court.
Walters
edited a book on sweeteners, titled
Sweeteners: Discovery, Molecular
Design and Chemoreception; this book won the Platinum
Award from the Agricultural and Food Chemistry Division of the American
Chemical Society.
Professor Walters has spoken to
numerous professional and lay audiences on the subject of sweeteners.
